apple porky soup

what i used:

  • 2 apples (depending on how sweet you want your soup)
  • 3-4 dried figs
  • pork cubes
  • huai2 shan1 (this long root herb whose skin’s brownish & sandy, when peeled, its white, just go market & ask)
  • groundnuts
  • dried scallops

what i did:

  1. bring a pot of water to boil
  2. throw in pork cubes (if you’re not lazy, boil the pork in separate pot 1st, then rinse with tap water, get rid of more fats :P)
  3. throw in groundnuts (try to soak ’em 1st if you want softer groundnuts instead of crunchier nuts)
  4. throw in huai2 shan1
  5. lower heat & simmer for about 1/2 hr
  6. throw in dried scallops, figs & apples
  7. slow heat for another 1-2 hrs depending how ‘deep’ you want your soup to be

viola! the soup’s super yummy, i’m not nuts about the squishy apples tho, but the husb & the kiddo like it 😀
