came across this recipe in a magazine, looks really yummy & wanted to try poaching pear, so thought of trying out when a group of friends came over, when they saw me opening a bottle of wine, they didn’t quite expect it, then when i told them this wine was from my wedding dinner (we were left with 5 bottles & now we’re left with 3 bottles), they got a shock & asked if i should keep it for other occasion, hah

for the pastry:

  • 260g flour
  • 100g unsalted butter
  • 110 icing sugar
  • pinch of salt
  • 2 eggs
  • 2 tbsp milk

for the poached pear:

  • 1litre red wine
  • 500ml water
  • 350g fine sugar
  • 1 cinnamon stick
  • 5 packham pears

for the almond mixture:

  • 125g unsalted butter
  • 1/2 cup icing sugar
  • 2 eggs
  • 2 tbsp flour
  • 1 cup ground almonds

for the pastry:

  1. put flour in whisking bowl, make a well in the centre
  2. add butter, sifted icing sugar, salt, eggs
  3. knead till grainy texture
  4. add milk
  5. knead till smooth
  6. wrap tight with cling film & refridgerate till slightly hard
  7. roll out dough about 2cm thick (i just spread out the dough using my palm hee)
  8. press a 34cm cutter on dough (which i don’t have, so i just spread the pastry out)
  9. lightly grease & flour 30cm baking tin (i just used the one i have)
  10. prick dough with fork all over
  11. preheat oven to 190deg
  12. blind bake pastry with baking paper for 20-25 mins (meaning cover all the pastry with baking paper)
  13. remove baking paper & bake further 5 mins
  14. remove & let cool for 15 mins

for the poached pear:

  1. peel pears (supposed to slice off the bottom part so the pears can stand, but i was lazy)
  2. bring to boil red wine
  3. reduce heat
  4. combine water, fine sugar, cinnamon stick into wine
  5. poach pears for 9mins on medium heat (slightly longer if you want to let the wine soaked into the pears)
  6. turn off heat & let pears sit in wine for 30mins

for the almond mixture:

  1. combine butter, icing sugar
  2. mix well
  3. add eggs, sifted flour, sifted ground almonds


  1. spoon almond mixture onto pastry, placed poached pears on top
  2. bake in oven at 180 deg for 3-5 mins
  3. garnish with pistachio nuts (which i’ve plain forgotten!)

i suggest u go easy on the icing sugar cos it turned out super uber sweet!
even the sweet-toothed husband said so!
unfortunately i can’t have poached pears in wine so often cos of obvious monetary reason, the poached pears were heavenly!!
