i was never into the green fellows since young (as with most kids, no?). and more so that i’m a supertaster, i kinda detest most greens because i find them bitter & absolutely unpalatable. but in the recent years (i mean the last 10 years), i’ve gradually made a huge effort to include lotsa greens in my diet, mainly because of health reasons, of course . and even more so ever since i started the kid on solids when he was 6 months old. i’m proud to say that at least 65-70% of our diet is made up of different sorta greens. although some greens i still find it unpalatable, i eat them with a scrunged-up face.

many moons back, i watched this cooking show on kale chips. i mean i heard (and done) vegetable chips like potato chips, carrot chips, sweet potato chips, etc., but a leafy green veg chips?! wow! it looked so easy to do & so delicious and so full of goodness. avocado is the superstar fruit. kale is the powerhouse vegetable. c’mon, look at the list of goodness this green brings:

minerals copper
vitamins A, C, and K
sulphur-containing phytonutrients
Carotenoids & flavonoids – the specific types of antioxidants associated with many of the anti-cancer health benefits.
eye-health promoting lutein
zeaxanthin compounds

Beyond antioxidants, the fiber content of cruciferous kale binds bile acids and helps lower blood cholesterol levels and reduce the risk of heart disease, especially when kale is cooked instead of raw

woah & wow right?!! you can close your mouth now
and so i went in a vain search of this seemingly elusive leafy green. i never find it and start to wonder if they really exist. you know, the case of too good to be true.

i gave up, and then last month, my sister said she bought kale and i went, “what?! where?! really?!”
on that same day, i found kale at the supermarket near my house!!!!!!!! it does exist!!! too good to be found!!!
raw kale

of course i definitely wanna do the kale chips!!!
but sad to say, some turned out very crispy but most are not. the ones that were not were, O very bitter.
the ones that were, O super-duper ultra delicious!!! unfortunately, the few crispy ones were very quickly snapped up by the kid!! fortunately, all the goodness are packed in the kid’s growing body!! hah!
