I saw this recipe on karencheng’s long time back and finally tried it. it was like she said, so good & so easy & so quick! and I love that I can add anything I want to the recipe!
karen’s recipe:
75g butter
2 tablespoons of brown sugar (or try none!)
2 medium eggs
4 medium sized banana (or 450g weighed with skin)
100g walnuts (or peacans), chopped 1 ½ cups
(225g) self raising white (or wholemeal) flour
¼ teaspoon of bicarb soda
pinch of salt
my recipe:
45g butter and 30g of chia seeds gel (apparently a very healthy substitute for butter!)
2 tablespoons of castor sugar
2 medium eggs
4 medium sized banana
100g chopped pecans
some raisins, some pumpkin seeds, and some cinnamon powder
225g self raising white flour
¼ teaspoon of bicarb soda
pinch of salt
1. Heat oven to 180ºC. Lightly grease a 11cm x 22cm loaf pan. Line the base and 2 long sides with baking paper. Leave some paper overhanging.
2. Melt the butter, mix in chia gel & sugar (if you’re using it).
3. Add eggs and combine well.
4. Mash the bananas and add it to the mixture.
5. Add the chopped pecans. Add 2 tablespoons of any other ingredients (Seeds, or sultanas, or coconut, or dates). Give it all a good stir!
6. Sift in flour, bicarb soda and pinch of salt. Stir until just combined.
7. Pour into the loaf tin. Bake for 45-50 minutes, or until the top is golden brown and an inserted skewer comes out clean. Leave to stand for a few minutes then cool on wire rack.
the husb says its great, the kid had a 2nd helping. I like it but find it a lil’ dry. will add in more bananas next round. its definitely something I see myself making again & again! definitely so much easier to make than the tedious, time-consuming spelt bread that I made the previous time. and next time I shall put in other stuffs I love, like sundried tomatoes, dried cranberries, apricots, and maybe some exotic (and expensive!) nuts like brazilian nuts or hazelnuts. ;D
